Caring for, and Storage Of Our Breads



Baguettes and Rustica's
Best the same day. To hold for the next day, wrap in plastic and store at room temperature, not in the refrigerator as this will accelerate the staling process. Prior to serving refresh in a moderate oven (approx. 350 degrees) for 5 minutes to crisp the bread and serve while still warm.

Wheels (Pull apart rolls)
Store the wheel wrapped in plastic at room temperature to maintain moisture. Do not put the wheel in the refrigerator as this will accelerate the staling process. Remove from plastic, wrap completely in aluminum foil, then refresh in the oven at 350 degrees for approximately 5 minutes. The rolls should be piping hot and have the aroma and texture of fresh baked bread. Serve warm.

Ciabatta and all naturally leavened breads (e.g. Pain au Levain, Semolina, Kalamata Olive, and all other sourdoughs)
Stores very well in a paper bag overnight. May be refreshed in a moderate oven (approx. 350 degrees) and served warm. If cut, store with the cut side down on the counter to maintain the crust and prevent drying. Beyond the 2nd day store in plastic to retain moisture and refresh in the oven prior to serving.

Vollkornbrot and Leinsamenbrot

Wrapped in linen or plastic these ryes will last for 8-10 days. Vollkornbrot may be stored in the refrigerator to extend shelf life.

Croissants, Danish, Sticky buns and Brioche Swirls
Wrapped in plastic these products will remain fresh for 3 - 4 days. Cream filled Danish must be kept in refrigerator. Refresh in a 350 degree oven fro 5 minutes and serve warm.

Brioche
It is very important to store Brioche in plastic to maintain moisture. Brioche will keep well for 3 - 4 days in a plastic bag.

Deep Dish Focaccia
Keep refrigerated in plastic. Place focaccia directly on rack of oven with a pan underneath to catch any dripping.
Heat in the oven at approx. 350 degrees for 10 minutes until warm.

All Breads To Freeze and restore
Wrap tightly in plastic, after the bread has completely cooled, then freeze. Thaw at room temperature, then unwrap and refresh in the oven.
